Elizabeth "Betty" Mae Sobieck-Erickson

December 11, 1939 — August 3, 2019

Elizabeth “Betty” Mae Sobiek-Erickson was born December 11, 1939 in St. Cloud, Minnesota to Leo and Ann (Schreder) Guck. She grew up in the Sauk Rapids area attending school and graduating from Catholic School.

After high school, Betty moved to the Metro and worked at a number of jobs. She met and married Edward Sobieck in 1962 and the couple made their home in the Coon Rapids area. Betty was employed at Medtronic. In 1979, Betty and Ed moved to Rush City to purchase Bunny's Bakery which they owned and operated until 1982. Ed passed away unexpectedly in 1981 and Betty ran Rush City Bakery for another year before selling it to Darrell Seim.

In 1985, Betty married Ron "Hot Rod" Erickson and they both sold their homes in Rush City and purchased a home on Goose Lake. Hospitality was always very important to Betty and they entertained and enjoyed the company of many at their lake home. Betty and Ron spent 10 years living in St. Petersburg, Florida before returning to Rush City and living in their condo at Rush Landing Court. Betty loved her family and loved cooking and baking and playing 500 with her friends. The last two years, Betty has resided at the Bickford Care Center in North Branch where she passed Saturday (8/3/19) at the age of 79.

Betty is survived by her husband Ron Erickson of Rush City; daughter Beth Hein of Rush City; sons Dan Sobieck of Oakdale, David (Ritsuko) Sobieck of Japan; grandchildren Brittney (Jeremy) Schwinn of Fargo, ND, Brooke Hein of Oakdale, Blake Hein of Rush City, Brent Hein of Fargo, ND, Tiffany Sobieck of Japan, Adam Sobieck of Oakdale; sister Mary Esselman of Sartell; many nieces, nephews and friends.

She is preceded in death by her parents Leo and Anna Guck; husband Ed Sobieck; sisters Arlene (Ken) Ethen, Kathy (Ted) Ferrinhoff, Jeanette (Ed) Binsfeld; brothers Jerry Guck, Dennis Guck.

Fr. Shane Stoppel-Wassinger will celebrate a Mass of Christian Burial for Betty: 10:30 AM; Saturday (8/10/19) at Sacred Heart Catholic Church in Rush City with a time of visitation and reviewal one hour prior to the Mass at church and Friday evening from 4-7 PM at the Olson Chapel in Rush City.
